White Chicken Chili Recipe

  • 1 pound boneless, skinless chicken breasts
  • 6 strips turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans white beans, rinsed and drained
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add diced onions and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for an additional minute.
  4. Add the chicken breasts, white beans, chicken broth, cumin, chili powder, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20-25 minutes, or until chicken is cooked through.
  6. Remove chicken, shred it, and return to the pot.
  7. Stir in corn and crumbled bacon. Heat through.
  8. Serve hot, topped with shredded cheddar and cilantro.

Notes

  • For a spicier version, add diced jalapeños.
  • Feel free to adjust seasonings to taste.
