  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup green bell pepper, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add onions and bell peppers; sauté until softened.
  3. Add garlic, cumin, chili powder, salt, and pepper; cook for 1 minute.
  4. Stir in chicken breasts, white beans, diced tomatoes, and chicken broth.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, until chicken is cooked through.
  6. Remove chicken, shred it, and return to the pot. Crumble turkey bacon and add to the chili.
