VERY MERRY CRANBERRY CHRISTMAS CREPES

Ingredients

  • 1 cup all-purpose flour
  • 2 cups milk
  • 3 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter
  • 1 cup cranberry sauce
  • 1/2 cup whipped cream
  • 1 tablespoon powdered sugar for dusting

Instructions

  1. In a bowl, whisk together flour, milk, eggs, sugar, vanilla, and melted butter until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it.
  3. Pour a ladleful of batter into the skillet, swirling to cover the base evenly.
  4. Cook until the edges start to lift, then flip and cook the other side for a minute.
  5. Repeat with remaining batter.
  6. Spread cranberry sauce over each crepe and fold or roll.
  7. Serve topped with whipped cream and dusted with powdered sugar.

Notes

  • For a twist, add some orange zest to the batter.
