- 4 slices turkey bacon
- 1 pound chicken breast
- 4 cups chicken broth
- 2 cups diced tomatoes
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1 cup spinach
- Salt to taste
- Pepper to taste
- Cook turkey bacon in a large pot over medium heat until crispy. Remove and chop.
- In the same pot, add chicken breasts and cook until browned on both sides.
- Add chicken broth, diced tomatoes, carrots, celery, garlic, Italian seasoning, and red pepper flakes.
- Bring to a boil, then reduce heat and let simmer for 20 minutes.
- Remove chicken, shred, and return to the pot along with spinach.
- Season with salt and pepper, then serve hot.
