Tuscan Style Chicken Soup

A warming and flavorful soup that’s perfect for chilly days.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup spinach, chopped
  • 1 cup white beans, drained and rinsed
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in onions, carrots, and celery; cook until softened.
  4. Add garlic and sauté for another minute.
  5. Pour in chicken broth and add diced tomatoes, oregano, and basil.
  6. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
  7. Add spinach and white beans, and cook for an additional 5 minutes.
  8. Season with salt and pepper to taste.

Notes

  • This soup can be made ahead and stored in the fridge.
  • Feel free to add other vegetables or pasta for variety.
