Turkey & Rice Stuffed Peppers

Delicious and hearty Turkey & Rice Stuffed Peppers are perfect for a family meal. Packed with flavor and nutrients, this dish is easy to prepare and sure to please everyone.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the onion and garlic until softened.
  3. Add the ground turkey and cook until browned.
  4. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Cut the tops off the bell peppers and remove the seeds.
  6. Stuff the peppers with the turkey and rice mixture.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove the foil and sprinkle with cheese, if using.
  9. Bake for an additional 10 minutes.
  10. Serve hot.

Notes

  • Feel free to add other veggies to the stuffing mixture.
  • This dish can be made ahead of time and frozen.
