  • 6 slices turkey bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 lime, juiced
  • 2 cups tortilla chips, for serving
  • 1 cup shredded cheese, for topping
  • 1 avocado, sliced, for garnish

Instructions

  1. In a skillet, cook turkey bacon until crispy, then chop.
  2. Add chopped bacon, onion, and garlic to the crock pot.
  3. Stir in black beans, corn, diced tomatoes, chicken broth, chili powder, and cumin.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, stir in lime juice.
  6. Serve with tortilla chips, shredded cheese, and avocado slices on top.
