Tomato Zucchini Pasta

A quick and nutritious meal perfect for busy weeknights.

  • 2 medium zucchinis
  • 3 large tomatoes
  • 8 ounces pasta of choice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  2. While the pasta is cooking, heat olive oil in a skillet over medium heat.
  3. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in chopped zucchinis and cook for 5-7 minutes until tender.
  5. Add diced tomatoes, salt, and pepper, and cook for another 2-3 minutes.
  6. Drain the pasta and add it to the skillet, tossing to combine.
  7. Remove from heat, stir in fresh basil, and serve immediately.

  • For a vegan option, skip the cheese.
  • Add grated cheese on top for extra flavor.
