- 2 cups tomato puree
- 1 cup vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 slices bread
- 4 slices cheddar cheese
- 2 tablespoons butter
- In a pot, heat olive oil over medium heat. Add tomato puree and vegetable broth, stirring to combine.
- Season with salt, black pepper, and garlic powder. Simmer for 15 minutes.
- Meanwhile, heat a skillet over medium heat. Butter one side of each slice of bread.
- Place one slice of bread (buttered side down) in the skillet, top with cheese, and finish with another slice of bread (buttered side up).
- Grill until golden brown, then flip and grill the other side until cheese is melted.
- Serve the grilled cheese with the hot tomato soup.
Notes
