Tomato Soup and Ggrilled Cheese

A warm, delicious combination of tomato soup and grilled cheese that is perfect for any comfort food craving.

Ingredients

  • 2 cups tomato puree
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 slices bread
  • 4 slices cheddar cheese
  • 2 tablespoons butter

Instructions

  1. In a pot, heat olive oil over medium heat. Add tomato puree and vegetable broth, stirring to combine.
  2. Season with salt, black pepper, and garlic powder. Simmer for 15 minutes.
  3. Meanwhile, heat a skillet over medium heat. Butter one side of each slice of bread.
  4. Place one slice of bread (buttered side down) in the skillet, top with cheese, and finish with another slice of bread (buttered side up).
  5. Grill until golden brown, then flip and grill the other side until cheese is melted.
  6. Serve the grilled cheese with the hot tomato soup.

Notes

  • For a creamier soup, add a splash of heavy cream just before serving.
  • You can use any type of bread or cheese you prefer.
