  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 small onion, chopped
  • 1 cup shredded cheese
  • 4 large tortillas
  • 1 tablespoon olive oil

Instructions

  1. Peel and cube the sweet potatoes, then boil until tender.
  2. In a skillet, heat olive oil and sauté the onion until translucent.
  3. Add the cooked sweet potatoes, black beans, cumin, and chili powder; mix well.
  4. Place a tortilla in the skillet, add the filling, and sprinkle cheese on top.
