Stove Top, Crockpot, or Instant Pot Chicken Pot Pie Soup

  • 1 pound chicken breast, cubed
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup potatoes, diced
  • 1/2 cup onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1/4 cup flour (for thickening)

Instructions

  1. In a large pot, combine chicken, carrots, celery, potatoes, and onion.
  2. Add chicken broth and bring to a boil.
  3. Reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
  4. Stir in heavy cream, thyme, garlic powder, salt, and pepper.
  5. Mix flour with a little water to make a slurry and stir into the soup for thickening.
  6. Add frozen peas, stir, and cook for another 5 minutes.
  7. Serve warm.

Notes

  • For a gluten-free option, substitute flour with cornstarch.
  • This soup can be made in advance and stored for up to three days.
