Spicy Pumpkin and Pesto Cheese Stuffed Shells

  • 12 large pasta shells
  • 1 cup pumpkin puree
  • 1/2 cup pesto
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a large bowl, mix together pumpkin puree, pesto, ricotta, half of the mozzarella, Parmesan, red pepper flakes, garlic powder, salt, and black pepper.
  4. Stuff each shell with the pumpkin mixture and place them in a baking dish.
  5. Pour marinara sauce over the stuffed shells and sprinkle the remaining mozzarella on top.
  6. Bake for 25-30 minutes until heated through and cheese is bubbly.

Notes

  • For extra kick, add more red pepper flakes to the stuffing.
  • Allow the shells to cool slightly before serving to set the filling.
