  • 2 tablespoons curry powder
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  2. Add garlic and ginger, cooking for another minute until fragrant.
  3. Stir in curry powder and chili powder, cooking for 1-2 minutes.
  4. Add the lentils and vegetable broth, bringing the mixture to a boil.
  5. Reduce heat and let simmer for 20-25 minutes or until lentils are tender.
  6. Stir in coconut milk and season with salt to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For extra heat, add more chili powder to taste.
