Slow Cooker Lemon Herb Chicken and Rice

A delicious and easy-to-make slow cooker recipe featuring tender chicken, flavorful rice, and zesty lemon.

Ingredients

  • 4 chicken breasts
  • 1 cup long grain rice
  • 4 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the chicken breasts until browned on both sides.
  2. In the slow cooker, add the rice, chicken broth, lemon juice, lemon zest, garlic, thyme, oregano, onion, salt, and pepper.
  3. Place the seared chicken on top of the rice mixture.
  4. Cover and cook on low for 6-8 hours or until chicken is fully cooked.
  5. Once cooked, fluff the rice and serve with fresh herbs if desired.

Notes

  • For extra flavor, marinate the chicken in lemon juice and herbs overnight.
  • Serve with steamed vegetables for a complete meal.
