  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1 cup tortilla strips

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the black beans, corn, diced tomatoes, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper.
  3. Cover and cook on low for 6-8 hours.
  4. Once cooked, shred the chicken and return it to the soup.
  5. Stir in heavy cream and cheese before serving.
  6. Top with tortilla strips before serving.

Notes

  • For a spicier soup, add more diced green chilies.
  • This soup can be topped with avocado, cilantro, or lime juice for additional flavor.
