- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups egg noodles
- 1 cup diced carrots
- 1 cup diced celery
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- Place the chicken, carrots, celery, onion, garlic, thyme, salt, and pepper into the slow cooker.
- Pour the chicken broth over the ingredients.
- Cover and cook on low for 6-7 hours or until the chicken is cooked through.
- Remove the chicken and shred it with two forks, then return it to the slow cooker.
- Add the egg noodles and cook on high for an additional 30 minutes or until the noodles are tender.
- Stir in fresh parsley before serving.
Notes
