Slow Cooker Chicken Noodle Soup

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Place the chicken, carrots, celery, onion, garlic, thyme, salt, and pepper into the slow cooker.
  2. Pour the chicken broth over the ingredients.
  3. Cover and cook on low for 6-7 hours or until the chicken is cooked through.
  4. Remove the chicken and shred it with two forks, then return it to the slow cooker.
  5. Add the egg noodles and cook on high for an additional 30 minutes or until the noodles are tender.
  6. Stir in fresh parsley before serving.

Notes

  • For extra flavor, add a bay leaf during cooking and remove before serving.
  • Feel free to add your favorite vegetables.
