Sicilian Chicken Soup

A delicious and hearty Sicilian chicken soup that is perfect for any meal.

Ingredients

  • 1 pound chicken thighs
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup pasta (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat oil over medium heat. Add the chicken and cook until browned.
  2. Add onions, carrots, and celery; sauté until softened.
  3. Pour in the chicken broth and diced tomatoes; bring to a boil.
  4. Stir in the garlic, oregano, and basil. Reduce heat and simmer for 30 minutes.
  5. Remove chicken, shred it, and return it to the pot.
  6. If using, add pasta and cook according to package instructions.
  7. Season with salt and pepper, garnish with parsley before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Can substitute chicken thighs with breast for a leaner option.
