Shredded Chicken Enchiladas with Cheesy Sour Cream Sauce

  • 2 cups shredded cooked chicken
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onions until soft.
  3. In a bowl, combine shredded chicken, sautéed onions, and half of the enchilada sauce.
  4. Fill corn tortillas with the chicken mixture, roll them up, and place in a baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas.
  6. Mix sour cream and cheddar cheese, then spread over the top.
  7. Bake in the preheated oven for 20-25 minutes until bubbly.
