Salsa Verde Tortilla Soup

A deliciously hearty and flavorful salsa verde tortilla soup with a twist of turkey bacon.

  • 1 tablespoon olive oil
  • 6 ounces turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 jar (16 ounces) salsa verde
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 corn tortillas, cut into strips
  • 1 cup shredded cheese
  • 1/2 cup cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and chop.
  2. In the same pot, sauté onion and garlic until soft.
  3. Pour in chicken broth and salsa verde; bring to a simmer.
  4. Add black beans, corn, cumin, and chili powder. Simmer for 15 minutes.
  5. Add tortilla strips and cook for an additional 5 minutes.
  6. Serve hot, topped with cheese and cilantro.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Feel free to add avocado slices on top for extra creaminess.
