Roasted Garlic Potatoes au Gratin

  • 2 pounds Yukon Gold potatoes
  • 4 cloves roasted garlic
  • 2 cups heavy cream
  • 1 cup grated Gruyère cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons fresh thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. Slice the potatoes thinly and layer half of them in the baking dish.
  4. Spread half of the roasted garlic over the potatoes.
  5. Pour half of the heavy cream over the first layer.
  6. Sprinkle half of the cheeses, thyme, salt, and pepper.
  7. Repeat the layers with the remaining ingredients.
  8. Bake for 45-60 minutes until golden and bubbly.
  9. Let rest for 10 minutes before serving.

Notes

  • For extra flavor, add some caramelized onions between the layers.
