  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 8 oz cream cheese
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 2 tbsp brewed espresso
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, vegetable oil, sugars, eggs, and vanilla.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture until combined.
  5. Line a cupcake tray with liners and fill each 2/3 full with the batter.
  6. Bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Let cupcakes cool completely.
  8. For the frosting, beat cream cheese and butter until smooth.
  9. Add powdered sugar, espresso, and vanilla; beat until fluffy.
  10. Frost the cooled cupcakes and serve.

Notes

  • For best flavor, use fresh pumpkin puree.
  • Adjust espresso according to taste.
