- 1 cup pumpkin puree
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 8 oz cream cheese
- 1/2 cup unsalted butter
- 2 cups powdered sugar
- 2 tbsp brewed espresso
- 1 tsp vanilla extract
- Preheat oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, vegetable oil, sugars, eggs, and vanilla.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the pumpkin mixture until combined.
- Line a cupcake tray with liners and fill each 2/3 full with the batter.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let cupcakes cool completely.
- For the frosting, beat cream cheese and butter until smooth.
- Add powdered sugar, espresso, and vanilla; beat until fluffy.
- Frost the cooled cupcakes and serve.
