One Pot Lasagna Soup

One Pot Lasagna Soup combines the flavors of lasagna into a comforting soup that’s quick and easy to make.

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups chicken broth
  • 1 can (24 ounces) crushed tomatoes
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, sauté until soft.
  3. Add chicken ham and Italian seasoning, cooking for a few minutes.
  4. Pour in chicken broth and crushed tomatoes, then bring to a boil.
  5. Add broken lasagna noodles and cook until tender.
  6. Stir in ricotta cheese and half the mozzarella until melted.
  7. Top with the remaining mozzarella and basil before serving.

Notes

  • This soup can be topped with extra mozzarella and baked for a few minutes for a crispy top.
  • Feel free to add vegetables like spinach or mushrooms for more nutrition.
