  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 4 cloves minced garlic
  • 6 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans
  • 1 can (15 oz) cannellini beans
  • 2 tablespoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup small pasta

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, cook ground turkey until browned.
  3. Add onions, carrots, and celery; sauté until soft.
  4. Stir in garlic and cook for 1 minute.
  5. Add chicken broth, tomatoes, beans, Italian seasoning, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  7. Add pasta and cook until al dente.
  8. Serve topped with chopped turkey bacon.

Notes

  • For extra flavor, add a sprinkle of Parmesan cheese on top before serving.
  • This recipe is great for meal prep and can be frozen for later use.
