- 1 ½ cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 1/2 cup lemon curd
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of cupcake liners in a muffin tin.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Add eggs, lemon juice, and lemon zest; mix until combined.
- Pour the batter over the crusts in the muffin tin.
- Bake for 20-25 minutes until set. Allow to cool, then refrigerate for at least 4 hours.
- Top each cheesecake with lemon curd before serving.
