  • 1 cup crushed graham crackers
  • 4 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 2 tablespoons brown sugar for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine crushed graham crackers and melted butter; mix well.
  3. Press the mixture into the bottom of mini cheesecake molds.
  4. In a mixing bowl, beat the cream cheese and granulated sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract and heavy cream until well combined.
  7. Pour the cheesecake batter over the crusts in the molds.
  8. Bake for 20-25 minutes until set but still slightly jiggly in the center.
  9. Allow to cool and refrigerate for at least 4 hours.
  10. Before serving, sprinkle with brown sugar and use a kitchen torch to caramelize the top.

Notes

  • For best results, chill the cheesecakes overnight before serving.
  • Use a small kitchen torch for even caramelization.
