Middle-of-Winter Creamy Tomato Soup

Warm up this winter with a creamy tomato soup that’s rich in flavor and topped with crispy turkey bacon.

Ingredients

  • 2 cups crushed tomatoes
  • 1 cup heavy cream
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into small pieces.
  2. In the same pot, sauté onion and garlic until soft.
  3. Add crushed tomatoes, heavy cream, basil, sugar, salt, and pepper. Simmer for 20 minutes.
  4. Blend the soup until smooth using an immersion blender.
  5. Serve hot, topped with chopped turkey bacon.

Notes

  • For extra flavor, add a splash of balsamic vinegar.
  • Pair with crusty bread for a complete meal.
