Middle-of-Winter Creamy Tomato Soup

A warm and comforting creamy tomato soup, perfect for winter days.

Ingredients

  • 4 strips turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add olive oil, onions, and garlic to the pot. Sauté until onions are translucent.
  3. Add crushed tomatoes and vegetable broth. Bring to a boil and then reduce heat to simmer for 20 minutes.
  4. Stir in cream, basil, salt, and pepper. Cook for an additional 5 minutes.
  5. Blend the soup until smooth. Serve hot, topped with crumbled bacon.
