Loaded Breakfast Enchiladas

A delicious and hearty breakfast option featuring enchiladas packed with turkey bacon and chicken ham.

  • 8 large eggs
  • 1 cup milk
  • 1 pound turkey bacon
  • 1 cup chicken ham, diced
  • 2 cups shredded cheese
  • 1 package tortillas
  • 1 cup salsa
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the turkey bacon until crispy, then chop it into small pieces.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper.
  4. In the same skillet, sauté the chicken ham for about 3 minutes.
  5. Pour the egg mixture into the skillet and cook until just set, stirring occasionally.
  6. Place a tortilla on a baking dish, add the egg mixture, turkey bacon, a sprinkle of cheese, and roll it up.
  7. Repeat with remaining tortillas, placing them seam-side down in the dish.
  8. Top with salsa and remaining cheese.
  9. Bake for 20-25 minutes until cheese is melted and bubbly.

Notes

  • Serve with avocado or sour cream for added flavor.
  • These enchiladas can be made ahead of time and refrigerated.
