  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 cup lemon curd
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the lemon zest and lemon juice.
  7. Fill the cupcake liners 2/3 full and bake for 18-20 minutes.
  8. Allow cupcakes to cool completely before adding lemon curd filling.
  9. In a separate bowl, whip the egg whites with cream of tartar until soft peaks form.
  10. Gradually add the powdered sugar and continue whipping until glossy and stiff peaks form.
  11. Pipe or spread the meringue on top of the cooled cupcakes.
  12. Use a kitchen torch to lightly toast the meringue, if desired.

Notes

  • For extra lemon flavor, you can add more lemon zest to the frosting.
  • Make sure the cupcakes are completely cooled before adding the meringue.
