  • 8 ounces turkey bacon
  • 1 pound ground turkey
  • 1 onion diced
  • 4 cloves garlic minced
  • 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 12 ounces lasagna noodles broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the ground turkey, onion, and garlic to the pot. Cook until the turkey is browned.
  3. Stir in the crushed tomatoes, chicken broth, basil, oregano, and bring to a simmer.
  4. Add the broken lasagna noodles and cook until al dente.
  5. In a separate bowl, mix ricotta cheese, salt, and pepper.
  6. Serve the soup in bowls and top with a dollop of ricotta cheese, shredded mozzarella, and crumbled turkey bacon.
