  • 2 cups chopped kale
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup small pasta, such as acini di pepe
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add onion, carrots, celery, and garlic to the pot. Sauté until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add kale and pasta. Cook until pasta is al dente.
  5. Stir in crumbled bacon, oregano, salt, and pepper. Simmer for a few minutes.
  6. Serve hot, garnished with Parmesan cheese.
