- 1 pound turkey bacon
- 2 cups chopped kale
- 1 cup diced carrots
- 1 cup diced celery
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 cup small pasta, such as acini di pepe
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- In a large pot, cook the turkey bacon until crispy. Remove and crumble.
- Add onion, carrots, celery, and garlic to the pot. Sauté until softened.
- Pour in chicken broth and bring to a boil.
