  • 1 can (14.5 oz) diced tomatoes
  • 2 cups diced carrots
  • 1 cup diced celery
  • 1 cup small pasta (like ditalini)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, heat beef broth over medium heat. Add diced tomatoes, carrots, celery, and bring to a boil.
  3. Reduce heat, add meatballs and pasta, and simmer for about 15 minutes or until meatballs are cooked through and pasta is tender.
  4. Adjust seasonings if necessary and serve hot, garnished with fresh parsley.
