  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugars until light and fluffy.
  3. Add the egg and vanilla extract and mix until combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Scoop the dough into a greased muffin tin, pressing down in the center to create a cup shape.
  7. Bake for 10-12 minutes until the edges are set.
  8. Remove from the oven and immediately press a few mini marshmallows into the center of each cup.
  9. Allow to cool before serving.

Notes

  • For an extra chocolatey flavor, add chocolate chips to the dough.
  • Store in an airtight container for up to a week.
