  • ½ cup unsalted butter, chilled and diced
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 2 tablespoons ice water
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • ½ cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, butter, and sugar to create the tart crust.
  3. Add the egg yolk and ice water, mixing until the dough forms.
  4. Roll out the dough and place it in a tart pan, then chill for 30 minutes.
  5. Bake the crust for 20 minutes, or until golden brown.
  6. In a saucepan, melt the sugar to make caramel until golden amber in color.
  7. Add in the butter and cream carefully, stirring until smooth.
  8. Stir in the sea salt.
  9. Pour the caramel into the tart crust and let it set for at least 2 hours before serving.

Notes

  • For an extra touch, sprinkle some flaky sea salt on top after the caramel has set.
