- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, cold
- 3/4 cup milk
- 1 tablespoon olive oil
- 1 pound chicken breast, cooked and shredded
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1/2 cup onion, chopped
- 1 teaspoon thyme
- 1/2 teaspoon pepper
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and cook until softened.
- Add shredded chicken and broth. Bring to a boil.
- In a bowl, mix flour, baking powder, and salt. Cut in butter until crumbly. Stir in milk until just combined.
- Drop spoonfuls of dough into boiling broth. Cover and simmer for 15 minutes.
- Stir in thyme and pepper. Cook for an additional 5 minutes.
