  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, cold
  • 3/4 cup milk
  • 1 tablespoon olive oil
  • 1 pound chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 cup onion, chopped
  • 1 teaspoon thyme
  • 1/2 teaspoon pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and cook until softened.
  2. Add shredded chicken and broth. Bring to a boil.
  3. In a bowl, mix flour, baking powder, and salt. Cut in butter until crumbly. Stir in milk until just combined.
  4. Drop spoonfuls of dough into boiling broth. Cover and simmer for 15 minutes.
  5. Stir in thyme and pepper. Cook for an additional 5 minutes.
  6. Serve hot and enjoy!
