- 1 pound ground turkey or lean beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces lasagna noodles, broken into pieces
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cups fresh spinach
- In a large pot, heat olive oil over medium heat. Add ground turkey or beef and cook until browned.
- Add chopped onion and minced garlic; sauté until the onion is translucent.
- Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper; bring to a boil.
- Add broken lasagna noodles; reduce heat and simmer for 15-20 minutes until noodles are tender.
