High Protein Lasagna Soup

A delicious and nutritious twist on traditional lasagna, this High Protein Lasagna Soup is perfect for a cozy meal.

  • 1 pound ground turkey or lean beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground turkey or beef and cook until browned.
  2. Add chopped onion and minced garlic; sauté until the onion is translucent.
  3. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper; bring to a boil.
  4. Add broken lasagna noodles; reduce heat and simmer for 15-20 minutes until noodles are tender.
  5. Stir in cottage cheese, mozzarella cheese, and spinach; cook until spinach wilts.
  6. Serve hot, garnished with grated Parmesan cheese.

Notes

  • This soup can be made ahead and reheated.
