Hearty Tortellini Lasagna Soup

A delicious and filling soup that combines the comforting flavors of lasagna with the convenience of a hearty soup, perfect for chilly evenings.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 6 cups chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup pasta sauce
  • 1 package (9 ounces) cheese tortellini
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1/2 cup parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the Italian sausage and cook until browned, breaking it up as it cooks.
  3. Stir in the onion and garlic, cooking until softened.
  4. Add the Italian seasoning and red pepper flakes, stirring to combine.
  5. Pour in the chicken broth, crushed tomatoes, and pasta sauce. Bring to a simmer.
  6. Add the tortellini and cook according to package instructions until tender.
  7. Stir in the spinach until wilted, then mix in the ricotta and half of the parmesan cheese.
  8. Season with salt and pepper before serving. Garnish with remaining parmesan.

Notes

  • This soup can be made ahead of time and reheated.
  • For added creaminess, stir in heavy cream just before serving.
