- 1 pound Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 6 cups chicken broth
- 1 can (28 ounces) crushed tomatoes
- 1 cup pasta sauce
- 1 package (9 ounces) cheese tortellini
- 2 cups spinach
- 1 cup ricotta cheese
- 1/2 cup parmesan cheese, grated
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat.
- Add the Italian sausage and cook until browned, breaking it up as it cooks.
- Stir in the onion and garlic, cooking until softened.
- Add the Italian seasoning and red pepper flakes, stirring to combine.
- Pour in the chicken broth, crushed tomatoes, and pasta sauce. Bring to a simmer.
- Add the tortellini and cook according to package instructions until tender.
- Stir in the spinach until wilted, then mix in the ricotta and half of the parmesan cheese.
- Season with salt and pepper before serving. Garnish with remaining parmesan.
