Hearty Chicken and Vegetable Stew

A delicious and comforting stew loaded with chicken and fresh vegetables.

Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups potatoes, peeled and diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken and cook until browned.
  2. Add onions and garlic, sauté until onions are translucent.
  3. Stir in carrots, celery, and potatoes, cooking for another 5 minutes.
  4. Pour in the chicken broth and add herbs. Bring to a boil.
  5. Reduce heat and let simmer for 30 minutes or until vegetables are tender.
  6. Season with salt and pepper before serving.

Notes

  • For added flavor, consider adding a splash of white wine.
  • Serve with crusty bread for a complete meal.
