Healthy Broccoli Cheddar Soup

A creamy and delicious broccoli cheddar soup made healthier with turkey bacon and chicken ham.

Ingredients

  • 4 cups broccoli florets
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup diced turkey bacon
  • 1 cup diced chicken ham
  • 1 cup heavy cream
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. In the same pot, add onions and garlic, sautéing until softened.
  3. Add broccoli and chicken broth, bringing the mixture to a boil.
  4. Reduce the heat and simmer until the broccoli is tender.
  5. Stir in the heavy cream, cheese, turkey bacon, and chicken ham, cooking until the cheese melts.
  6. Season with salt and pepper. Serve hot.

Notes

  • For a thicker soup, blend half of the soup and mix back in.
  • Feel free to substitute with different cheeses.
