  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach
  • 1/4 cup feta cheese
  • 1 avocado, sliced

Instructions

  1. Preheat grill to medium-high heat.
  2. Peel and cube sweet potatoes, then toss with olive oil, garlic powder, paprika, salt, and pepper.
  3. Grill the sweet potatoes in a grill basket until tender, about 15-20 minutes.
  4. Season chicken breasts with olive oil, garlic powder, salt, and pepper.
  5. Grill chicken for about 6-7 minutes on each side until fully cooked.
  6. Let chicken rest for 5 minutes, then slice.
  7. In a bowl, layer the spinach, grilled sweet potatoes, chicken, feta cheese, and avocado.
