Green Enchiladas with Chicken Cream Cheese Filling

A delicious and easy recipe for green enchiladas filled with chicken and cream cheese.

  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup green enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, cream cheese, cumin, garlic powder, and salt.
  3. Warm the tortillas in a dry skillet or microwave until pliable.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a greased baking dish.
  5. Pour the green enchilada sauce over the top and sprinkle with shredded cheese.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden.

Notes
