- 1 cup gluten free all-purpose flour
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup powdered sugar for coating
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the gluten free flour, sugar, cocoa powder, baking powder, and salt.
- Add the vegetable oil, eggs, and vanilla extract and mix until well combined.
- Chill the dough in the refrigerator for 30 minutes.
- Once chilled, scoop out the dough and roll into balls.
- Coat each ball in powdered sugar and place on a baking sheet.
- Bake for 10-12 minutes or until the edges are set.
- Allow to cool before serving.
