Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, spices, and salt.
  3. In a separate bowl, cream together the butter and sugars until fluffy.
  4. Add the egg, coffee, and vanilla to the butter mixture and mix until well combined.
  5. Gradually stir in the dry ingredients until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
