English Muffin Breakfast Pizzas

  • 2 English muffins
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped bell peppers
  • 1/2 cup sliced mushrooms

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Split the English muffins in half and place them on a baking sheet.
  3. Spread pizza sauce evenly over each muffin half.
  4. Sprinkle mozzarella cheese on top of the sauce.
  5. In a skillet, cook the eggs sunny-side up and season with oregano, salt, and pepper.
  6. Place a cooked egg on each muffin half.
