These Eggnog Cookies are the perfect festive treat, combining the classic flavors of eggnog with a soft, chewy cookie.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 2 cups white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth.
  4. Add eggs, eggnog, and vanilla extract, mixing well.
  5. Gradually add the flour mixture to the wet ingredients.
  6. Fold in the nutmeg, cinnamon, and white chocolate chips.
  7. Drop rounded tablespoons of dough onto a baking sheet.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra flavor, add a splash of rum or rum extract to the dough.
