Easy Southwest Chicken Soup

  • 1 pound chicken breast
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup chopped bell peppers
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onions and bell peppers, and sauté until softened.
  2. Add garlic and cook for an additional minute.
  3. Stir in the chicken, chicken broth, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Remove the chicken, shred it with two forks, and return it to the pot.
  6. Stir in fresh cilantro before serving.

Notes

  • For extra spice, add jalapeños or cayenne pepper to taste.
  • This soup can be made in a slow cooker for a more hands-off approach.
