- 1 pound chicken breast
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 cup chopped bell peppers
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- In a large pot, heat olive oil over medium heat. Add the onions and bell peppers, and sauté until softened.
- Add garlic and cook for an additional minute.
- Stir in the chicken, chicken broth, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Stir in fresh cilantro before serving.
Notes
- For extra spice, add jalapeños or cayenne pepper to taste.
- This soup can be made in a slow cooker for a more hands-off approach.
