- 1 pound boneless, skinless chicken breasts
- 2 cups diced potatoes
- 1 cup chopped carrots
- 1 cup frozen peas
- 1 onion, chopped
- 2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 cup heavy cream
- 1 package refrigerated pie crusts
- Place the chicken, potatoes, carrots, peas, and onion in the slow cooker.
- In a separate bowl, mix together the chicken broth, salt, pepper, garlic powder, and thyme.
- Pour the broth mixture over the ingredients in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken and stir in the heavy cream.
- Transfer the mixture to a baking dish and top with pie crusts.
- Bake in a preheated oven at 425°F for 15-20 minutes, until the crust is golden brown.
