Easy Slow Cooker Chicken Pot Pie

A warm and comforting chicken pot pie made easily in a slow cooker.

  • 1 pound boneless, skinless chicken breasts
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup frozen peas
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 1 package refrigerated pie crusts

Instructions

  1. Place the chicken, potatoes, carrots, peas, and onion in the slow cooker.
  2. In a separate bowl, mix together the chicken broth, salt, pepper, garlic powder, and thyme.
  3. Pour the broth mixture over the ingredients in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken and stir in the heavy cream.
  6. Transfer the mixture to a baking dish and top with pie crusts.
  7. Bake in a preheated oven at 425°F for 15-20 minutes, until the crust is golden brown.

Notes

  • For a richer flavor, add a splash of white wine to the broth.
  • Feel free to incorporate your favorite vegetables.
