1 pound boneless chicken breasts
2 cups chicken broth
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon lime juice
1 cup tortilla chips, for serving
1/2 cup shredded cheese, for serving
1/4 cup fresh cilantro, for garnish
Instructions
In the crockpot, combine the chicken, chicken broth, black beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, salt, and pepper.
Cover and cook on low for 6-8 hours or on high for 4 hours.
About 30 minutes before serving, shred the chicken inside the crockpot.
Stir in lime juice.
Serve with tortilla chips, shredded cheese, and fresh cilantro on top.
