Easy Creamy Lasagna Soup

  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 12 ounces broken lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground beef, onion, and garlic, and sauté until the beef is browned.
  2. Stir in crushed tomatoes, chicken broth, oregano, and basil. Bring to a boil.
  3. Add broken lasagna noodles and cook until al dente, about 10 minutes.
  4. Reduce heat and stir in ricotta cheese until melted and creamy.
  5. Remove from heat and top with mozzarella and Parmesan cheese.
  6. Let sit until cheese is melted, then serve hot.
