Easy Chicken Pot Pie Soup Recipe

  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 tablespoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups pie crust, cut into strips

Instructions

  1. In a large pot, cook the turkey bacon until crispy and set aside.
  2. In the same pot, add the chicken and cook until browned.
  3. Add carrots, celery, onion, and garlic. Cook until softened.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat, add peas, heavy cream, thyme, salt, and pepper. Simmer for 10 minutes.
  6. While the soup simmers, prepare the pie crust strips and bake until golden.
  7. Serve soup topped with pie crust strips and crumbled bacon.

Notes

  • For a thicker soup, add a cornstarch slurry.
  • You can use leftover chicken for a quicker prep time.
